Sunday lunches are something of a tradition in Western culture. A meaty main, rich sauces, plenty of veg and starches and you're on your way to a winning afternoon with friends and family. This said, it's important not to grow stale! Try sprucing up old favourites by taking a fresh approach and using different ingredients. Below is the recipe for a delectable beef roast with Gremolata.

Ingredients

Beef Roast

  • Five pounds boneless beef chuck roast
  • Two large onions, sliced
  • Two cups dry red wine
  • Half a cup of red wine vinegar
  • Quarter cup of sugar
  • Two cloves garlic crushed
  • Four cups low-sodium chicken broth
  • One liberal bunch of thyme
  • Salt and freshly ground black pepper
  • A quarter cup of olive oil

Gremolata

  • Quarter small red onion, finely chopped
  • Quarter cup chopped fresh green chives
  • Quarter cup chopped fresh flat-leaf parsley
  • Quarter cup of grated lemon zest
  • Salt and freshly ground black pepper
  • Two tablespoons red wine vinegar
  • One red jalapeno or bird's eye chili, finely chopped
  • Quarter cup chopped fresh basil

Assembly 

Two tablespoons red wine vinegar
Salt and freshly ground black pepper
One cup all-purpose flour
Quarter cup vegetable oil

Preparation

Beef Roast

Preheat your oven to 325 degrees Celsius. Tie the roast with kitchen twine at 1 inch intervals. Season liberally with salt and pepper.

Heat up the olive oil in a large ovenproof pot over a medium to high heat. Cook in the onions until they are soft (approximately ten to fifteen minutes). Add the wine, vinegar, and sugar to the pot, and bring to a boil. Reduce the heat so that it simmers until reduced by half (approximately ten to fifteen minutes). Add the garlic to the broth and allow it to simmer again; add the roast and thyme. Cover and braise in oven, turning roast occasionally, until roast is tender, approximately two to three hours in total.

Transfer the roast to a large baking dish and strain the braising liquid over the roast. Cover and chill onions. Cover and chill the roast for at around twelve hours.

Gremolata

Mix the onions and vinegar in a large bowl. Let it sit for thirty minutes or so. After this drain, add the chives, parsley, chili, basil, and lemon zest and toss well.

Once you have completed these steps, assemble the dish to your liking. The Gremolata should be used as a relish styled topping for the roast. This dish is great for all seasons, and is sure to be a hit at your next function or as a main dish for a Sunday Lunch with the family. Ingredients                                                   Method
* 2 cup besan (Bengal gram flour)                 1.First of all, take some deep pot, fill

* 2 tsp garam masala                                    4.Reduce the heat .pour yogurt, lemon
* 1 tsp turmeric powder                                   juice and water. Cook well.
* 2 tbsp lemon juice                                     5.Add pakoras into this chutney and serve
* ½ cup mint leaves (chopped)                       after 15 minutes.
* 2 tsp coriander leaves (chopped)
* salt to taste

Ingredients                                     Method
2 boiled potatoes (mashed)             1.Soak soya granules in warm water for half an
½ cup soya granules                         hour.
2 tsp boiled peas                             2.Wash with clean water for 2-3 times. Squeeze
2 tsp capsicum (pieces)                    by hands fully.
4 buns or bread pieces                    3.Mix all items to mashed potatoes excepting
1 onion (chopped fine)                    bread crumbs, and prepare small tikkis out
1 tsp ginger-garlic (paste)               of it. Keep them inside fridge for one hour.
Salt to taste                                      4.Pour oil in a non-stick pan and fry tikkis golden
                                                             in reduced heat.
                                                         5. Spread butter on buns or bread slices properly
                                                             keeps one tikki over it. Then place onion and
                                                             tomato slices over it.
                                                         6. Serve hot with tomato sauce.

Ingredients                                                  Method
½ kg paneer (cheese)                                 1.Cut cheese into square shaped pieces.
50 gms garlic (chopped)                                Heat ghee in a cauldron and add cum
50 gms ginger (chopped)                               in seeds to it.
50 gms coriander leaves (chopped)        2.Add garlic, ginger, onion and fry. When
30 gms green chili (cut to length)               turn pink coloured add green & stir for
100 gms onion chopped                                sometime. Then add other spices.
20 gms besan (gram flour)                       3.Add besan and fry golden.
75 ml ghee                                                   4.Cool the mix and besmear paneer pieces
25 gms red chilli powder                           5.Get the paneer pieces  pierced with a
5 gms garam masala                                      long prick or rod and cook in a tandoor
5 gms kebab masala                                       for 4-5 minutes’.
Salt to taste                                                 6.Remove from rod, sprinkle kebab masala
                                                                          on the paneer pieces. Serve with
                                                                          chutney.

Learn to make Aaloo ka Bhurta (Crushed Potatoes)

You are well known about Baingan (brinjal) Ka Bhurta’ but hardly have heard about (potato) Aaloo Ka Bhurta’.It is very delicious when taken with daal-chawal(Prepared pulses and rice) the method is given below:

      Ingredients                                                              Method
 * 300 gms potatoes (boiled)                                   1.Mash the boiled potatoes,
 * 100gms tomatoes (chopped-fine)                            mix salt and black pepper
 *  ½ tsp red chilli                                                        and keep side.
 *  ½ tsp cumin seed (roasted and pounded)             2.chop tomatoes fine mix
 * ½ tsp rai (small mustard seeds powder)                   well to the potato mix
 * ½ tsp black pepper powder                                  3.Add coriander leaves, cum-
 * 1 bunch coriander leaves (chopped)                       in seeds and rai and mix
 * salt to taste                                                            properly. Serve with
                                                                                 prepared pulse rice.
